My Salmon & Sweet Potato Bowl

One of my favorite places to eat in LA is Sweet Greens. 

For those of you who don't know what Sweet Greens is, it's a cute build your own salad place and it is uhh-mazinggg!

But it’s kinda expensive. So I decided to make a “mock Sweet Green salad.” 

 

This is my favorite meal to make when I don't feel like making a whole meal, but I want protein and veggies and fiber. 

This bowl has it all. Rice, tomatoes, baby spinach, salmon, sweet potatoes, and avocado.

With this bowl you're getting omega-3's, vitamins, leafy greens, and more!

 

What you'll need:

A big handful of baby spinach

Quinoa or brown rice

1 Avocado

Cherry or grape tomatoes

Salmon

1 Sweet potato

Miso ginger dressing (Got mine at Whole Foods)

 

Preheat your oven to 450 degrees. Then start your rice. I like to prep everything first and let it all cook together becuase it all takes about 15 minutes.

Follow the directions on the bag or box to start. (Usually 1 cup quinoa to 2 cups water, bring to a boil, cover and simmer for 15 minutes)

 

While that's going, slice your sweet potatoes into chips. Oil a pan and lay out the chips. I use Chosen Foods Avocado Oil spray.

Oil the top of the potato chips and salt them a little with some Himalayan pink salt. Stick them in the oven for 15 minutes. 

 

 

While that’s cooking, chop your salmon into small chunks. Cook your salmon by adding some oil to a skillet and cooking it on a medium to low temperature with a lid on it, continuously stirring, until it's pink and opaque. (I removed all the skin from my salmon before cooking)

 

 

I LOVE this Follow Your Heart brand Miso Ginger dressing from Whole Foods. It's the perfect compliment to any salad. It's vegan, it's light, and the flavor is not overpowering.

 

 

 

Once everything is cooked, start making your bowl with however much of everything you choose! Then add your dressing and mix!

 

*Pro Tip: Put a bowl over your bowl like a lid and shake it to mix it all evenly. It’s easier and more fun that way!

 

There you go! A super fast and easy dinner/lunch that has a lot of the nutrients you need.
