Make Your Own Almond Milk At Home

I drink almond milk almost daily with my tea lattes. (I'll have a recipe for those up soon)

But at some point, you have to wonder: Am I drinking what I think I'm drinking?

Buying the store-bought almond milk is convenient and has a longer shelf life but it can have added sugars and things you don't want to be drinking every day. 

So, I researched and wondered how hard it would be to make my own!

Turns out, it's really easy and it tastes amazing.

 

Here's my recipe for easy at home almond milk!

 

What You Need:

Organic Raw Almonds

Filtered Water

A Blender

Pitted Dates (for sweetness)

Vanilla Extract (optional depending on desired sweetness)

or Vanilla Beans (if you wanna be real fancy)

Nut Bag or Thin Dish Towel

 

STEP 1

The first step really has to do with preparation. You have to soak your almonds for 24-48 hours before you can do anything.

The ratio of almond milk is similar to making quinoa. 1 cup of almonds per 2 cups of water will make 2 cups of almond milk.

Soak only what is needed. I do it 2 cups at a time because the shelf life is only a few days in the fridge. I use 2 cups in 2 days. 

Once your almonds have soaked, you're ready to begin!

 

STEP 2

Rinse your almonds in a strainer. rinse well! Your almonds should feel a little squishy. That means they've soaked in all that water and plumped.

 

STEP 3

Blending time! Put your almonds and 2-3 cups of water in a blender. (depending on thickness you want, add more or less water) I added 2 dates and a tsp of vanilla extract. Blend for about 20 seconds!

Get it all smooth and creamy.

 

STEP 4

My favorite step! SQUISH. Pour your concoction into a nut bag or thin dish towel over a bowl. 

Squish it. Squish allllll of that almond milk out of the almond meal. (you can save that stuff for later to add to oatmeal or baking) What you've squished out its, obviously, your almond milk! Yay!

 

Store in the fridge in a mason jar or something sealed. When ready to use, shake it, because it tends to separate.

 

Voila! Congrats! You've just made your own almond milk! Look at you, living off the earth and being self-sufficient. *Pats on back*
